Baingan Bharta/ Brinjal / Eggplant

Baingan Bharta is mostly served in North India with Chapatis. Being a Punjabi this is my favorite and I cooked this in Punjabi style that is bit spicy but tasty

Ingredients:-
Brinjal - 1
Onion - 1 finely chopped
Tomato - 2 finely chopped
Green chiiles - 2 finely choppedand
Garlic - 7 to 8 cloves finely chopped
Ginger - 1 tpsp finely chopped
Turmeric powder - half

small tpsp
Red chilli powder - as per your taste
Salt as per taste
Coriander powder - 1/2 tpsp
Cumin seeds -  a pinch
Coriander seeds - a pinch


Preparation:-

Roast a Brinjal on a open flame on a gas stove or roast in a microwave. Before roasting apply oil on a Brinjal so that it is easy to peel there after.
After roasting the Brinjal,  once it get come to normal temperature peel it off and mash it . Keep aside mashed Brinjal for later use.

Heat oil in a pan and add cumin and coriander seeds. After that add garlic and ginger . Now add chopped onion and saute it till golden brown color appears. After that add chopped tomatoes and chills. Saute for 2 to 3 minutes and add turmeric powder, salt, red chilli powder, coriander powder, and a pinch of garam masala if you want more spicy. In the end add mashed Brinjal and saute for 5 to 6 minutes. Garnish with corinder leaves.
